Tropical Chicken Recipe for Instant Pot (or any electric pressure cooker)

Looking for an easy chicken dish you can make with your Instant Pot or other electric pressure cooker? Your family will love our recipe for Tropical Chicken! The recipe is perfect for a family of four, but can easily be modified for larger or smaller gatherings.

Please note this recipe uses standard British measurements, so if you’re in the USA you’ll need to convert a few things. To convert measurements, you can use the chart found here.

Tropical Chicken Recipe for Instant Pot (or any electric pressure cooker)

Yield: 4


  • 1 kg boneless chicken thighs
  • 50 g olive oil
  • 1 large onion, chopped
  • 1 340g tin pineapple cubes in syrup
  • 250 ml chicken stock
  • 2 tsp ground ginger
  • 1 tbsp desiccated coconut
  • 1 tbsp Worcestershire sauce
  • 2 tsp cornflour


  1. Heat the olive oil in the pressure cooker pot. Add the chicken thighs and gently brown. Add the onions to the pressure cooker and gently saute for 2 to 3 minutes. Remove the chicken and onion from the pressure cooker and set aside.
  2. Switch off the saute function and drain out any fat from the pressure cooker pot.
  3. Add the tin of pineapple (including the syrup), ginger, Worcestershire sauce and stock to the pressure cooker. Mix together.
  4. Return the chicken and onion to the pot.
  5. Cook at high pressure for 5 minutes and then reduce pressure using a quick release.
  6. Remove the chicken from the pressure cooker. Switch on the saute function with the sauce still in there.
  7. Stir the cornflour with a little cold water until blended together (or according to packet instructions) and mix in to the pressure cooker. Allow to cook until desired consistency has been reached. Remember to continue stirring during this time.
  8. Pour the sauce over the chicken.


Serving Suggestion: Serve with rice or noodles.
