Bubble and squeak is a fantastic way to give new life to those remaining roast potatoes and vegetables from a roast dinner. Try cooking them in an air fryer - it's a quick process and they taste great!

Instructions
Put all your leftover roast potatoes and vegetables in a bowl.
Mash the vegetables up using a potato masher until they’re well combined but still have some texture. If you’re using herbs, mix them in now for that extra burst of flavour.
Once mashed, shape the mixture into patties and place in your air fryer basket. You can lightly oil the base of the air fryer basket with a brush, or place them on parchment paper if you are worried about them sticking.
Gently brush them with a little olive oil.
Cook them at 200°C/390°C for about 15 minutes, turning halfway through.
Serve them as a delicious breakfast with a side of eggs, as a hearty lunch with a fresh salad, or even as a side for your dinner.
