This easy air fryer cod recipe is perfect for busy evenings. Flaky white fish is topped with herby green pesto and crispy breadcrumbs, then cooked in under 15 minutes. Simple, delicious, and full of flavour – it’s a midweek winner!

Ingredients
2cod filletsskinless and boneless – fresh or frozen
2tbspgreen pesto*jarred or homemade
2tbsppanko breadcrumbs*
2tbspgrated Parmesan*optional
Salt and black pepperto taste
Lemon wedgesto serve
Instructions
Pat the cod fillets dry with kitchen paper (especially if defrosted). Season lightly with salt and pepper.
Spread 1 tablespoon of pesto over each fillet. Sprinkle breadcrumbs on top, gently pressing them in so they stick. (Or mix the pesto and breadcrumbs in a bowl first, then spread the mixture over the fillets.)
Air fry at 200°C for 10 to 12 minutes, or until the fish flakes easily. If cooking from frozen cook for an extra 2 to 4 minutes. If using, sprinkle grated Parmesan on top 2 minutes before the end.
Serve with lemon wedges and your favourite sides – try it with new potatoes, a couscous salad, or some roasted veg.
Notes
Add more pesto, breadcrumbs and parmesan according to the size of the cod or personal taste.
