Ingredients
400gpork fillet
1tbspolive oil
2garlic clovessee notes
1tspdried mixed herbs
½tsppaprika
½tspsalt
¼tspground black pepper
Instructions
Pat the pork fillet dry with kitchen paper and slice into medallions approximately 2.5cm thick.
In a bowl, mix together the olive oil, crushed garlic (or paste), mixed herbs, paprika, salt and black pepper.
Add the pork medallions to the bowl and toss until evenly coated in the garlic and herb mixture.
Preheat the air fryer. Set the air fryer to 190°C and preheat for 3 minutes, if required by your model.
Arrange the pork medallions in a single layer in the air fryer basket, leaving a little space between each piece.
Air fry at 190°C for approximately 10–12 minutes, turning halfway through. Cooking times will vary depending on the thickness of the medallions and your air fryer. Check the thickest piece with a meat thermometer and cook until the centre reaches 75°C.
Remove the pork from the air fryer and leave to rest for 3–5 minutes before serving.
Notes
Garlic: Fresh garlic gives the pork plenty of flavour, but you can substitute the 2 cloves with 2 tsp garlic paste or ½ tsp garlic granules if preferred. If using fresh garlic or garlic paste, make sure it is well mixed with the oil to help prevent it burning during cooking.
