Air Fryer Pizza Frittata
This easy air fryer pizza frittata combines eggs, mozzarella, pepperoni and tomatoes for a quick meal packed with pizza-inspired flavour.

Ingredients

eggs

mozzarella
grated

pepperoni slices
chopped

cherry tomatoes
quartered
½
tsp
dried oregano

tbsp
passata

cal spray or olive oil spray
salt and pepper to taste

Instructions
Preheat the air fryer to 180°C for 3 minutes.
Lightly grease a 15-18cm round ovenproof tin.
Whisk the eggs with the salt and black pepper until slightly frothy.
Stir in the grated mozzarella, pepperoni, cherry tomatoes, oregano and passata if using.
Pour the mixture into the prepared tin.
Air fry at 180°C for 8-10 minutes until almost set.
Scatter the remaining mozzarella over the top.
Return to the air fryer for 1-2 minutes until the cheese has melted and the eggs are fully cooked.
Leave to rest for 1 minute before slicing and serving.
Notes
Grated mozzarella melts more evenly throughout the egg mixture than fresh mozzarella.
Add extra pizza toppings such as peppers, mushrooms or cooked ham.
Enjoy warm or cold.
Store leftovers in the fridge for up to 2 days.
