A vibrant and comforting soup made with carrots, chopped tomatoes, and a touch of celery for extra flavour. It’s naturally sweet, smooth, and full of goodness, perfect for a quick lunch or light dinner straight from the soup maker.
Optionally sauté the onion, celery, and garlic if your model allows. Cook for 2–3 minutes until softened.
Add the carrots, chopped tomatoes, tomato purée, herbs, and vegetable stock up to the MAX line.
Select the smooth soup setting.
When finished, taste and adjust seasoning. If the soup is too thick add some hot water and stir it in/blend it, to your preferred consistency.
Notes
*I used two x 400g tins of chopped tomatoes with 300g carrots. I did decide to add some extra hot water at the end of the smooth soup cycle as it was a little thick. If you prefer you can use just 1 x 400g tins of chopped tomatoes and up the carrots to 400g.** I tend to add the stock powder or cube directly to the soup maker jug and then pour hot water in until I reach the MAX line. I give the contents a little stir too at this point. The amount of stock you can fit in may vary.
