Instructions
Roughly chop the tomatoes, celery, onion, and potato.
Add the onion and garlic to the soup maker to chop it up (if using a soup maker with a chop function).
Add the tomatoes, celery, potato, herbs (and sugar if using) to the soup maker jug.
Add the stock pot and pour hot water to the line.
On your soup maker, choose the smooth soup function. This will cook and blend the ingredients perfectly for a smooth, creamy consistency. The cycle usually takes about 30 minutes.
Once the cycle is complete, carefully taste the soup. Adjust the seasoning with salt and pepper as needed.
Pour the soup into bowls and garnish with a drizzle of olive oil or fresh herbs like parsley or basil, if you like.
Notes
If you prefer a chunkier texture, use the Chunky Soup function instead and pulse blend at the end until you get your desired consistency. To make it richer, stir in a splash of cream or a knob of butter after cooking.
