This chicken and green lentil soup is a filling, easy lunch made in a soup maker. Chicken thighs, lentils and vegetables cook together in a thyme-flavoured stock, with lemon juice and parsley stirred in at the end.
Add the chicken, lentils, onion, carrot, celery and thyme to the soup maker. Pour in the chicken stock, making sure not to go over the maximum fill line.
Select Chunky Soup.
At the end of the soup maker cycle, carefully remove the lid and stir in the lemon juice, parsley and black pepper. Taste and adjust the lemon or seasoning if needed.
Notes
Note 1: I used a jar of green lentils from M&S. The drained weight of a 430g jar weighs 280g. You can use any brand of tinned or jarred green lentils but the drained weights might differ, but not by much.Note 2: Only use raw chicken if you are using a Ninja Soup Maker. Otherwise use cooked chicken, approx 200g to 250g.
