Ingredients
1kgchicken breastsliced
3peppersmixed colours, sliced
2red onionssliced
2tbspfajita seasoning
1tbspolive oil
Instructions
Preheat the oven to 200°C (180°C fan).
Add the sliced chicken, peppers, and red onions to a large roasting tray.
Drizzle over the olive oil.
Sprinkle over the fajita seasoning and toss everything together until evenly coated.
Spread the mixture out into a single layer.
Roast for 25-30 minutes, stirring once halfway through cooking.
Check that the chicken is cooked through before removing from the oven.
Serve with rice, fresh coriander, salsa, and a spoonful of Greek yoghurt if desired.
