Lemon Chicken Orzo Soup (in a Soup Maker)
A light and comforting soup with tender chicken, vegetables, orzo pasta, and a zesty lemon lift. Perfect for spring or whenever you want something fresh and warming from your soup maker.

Ingredients
2 to 3
raw chicken breast or thighs
chopped (see note 1)

carrot
peeled and chopped
1
celery stick
chopped
1
small onion
chopped

garlic cloves
crushed or finely chopped
1/2
lemon (zest and juice)
more to taste
1/2
tsp
ground black pepper
1
tsp
oregano
1
chicken stock pot or cube
plus hot water (to the MAX line of your soup maker)

cooked orzo
stirred in at the end
Optional: Handful of spinach or peas
parsley to garnish
Instructions
Add the chopped raw chicken, chopped veg, garlic, lemon zest, lemon juice, stock cube/pot, and seasoning to the soup maker.
Pour hot water up to the MAX line.
Set your soup maker to the chunky setting.
Once the cycle has finished, stir in the cooked orzo and any optional spinach or peas. Let it sit for a few minutes to warm through.
Adjust seasoning and lemon to taste. Serve with a sprinkle of parsley or grated parmesan or cheddar cheese if you like.

remember to check whether your soup maker manufacturer recommends raw meat. If not, use cooked chicken.
