Pressure Cooker Marry Me Chicken

Ingredients

sun-dried tomatoes
sliced (in oil, drained slightly)

tsp
dried mixed Italian herbs

double cream

grated Parmesan cheese
Fresh basil
for garnish (optional)

to taste
Instructions
Select Sear/Sauté (High) on your Ninja Foodi.
Add olive oil and butter to the pot.
Season chicken with salt and pepper, then sear for 2–3 minutes per side until golden.
Remove and set aside.
Add minced garlic and cook for 30 seconds.
Pour in chicken stock, scraping up any browned bits.
Stir in sun-dried tomatoes, dried herbs, and chilli flakes (if using).
Return the seared chicken to the pot.
Close the lid, set valve to Seal.
Select Pressure Cook > High > 7 minutes.
Allow 5 minutes natural release, then quick release remaining pressure.
Switch to Sear/Sauté (Low–Med).
Stir in double cream and Parmesan cheese.
Simmer gently for 3–5 minutes until the sauce thickens slightly.
Garnish with fresh basil or parsley.
Serve with pasta, rice, mash, or crusty bread to soak up the sauce.
