This pressure cooker pork chops and apples recipe is an easy one pot dinner that is quick to prepare and tastes great alongside some potatoes and green vegetables.
2applescored, peeled and sliced (Bramley or another tart variety)
Fresh parsleychopped, for garnish (optional)
Instructions
Optionally season both sides of the pork chops with a little salt and pepper. Add some oil to the insert bowl of the pressure cooker and switch to the sear/sauté mode.
When the oil is hot, add the pork chops and sear them on both sides, about 2 minutes on each side should be enough. Remove the pork chops and set to one side.
Add the chopped onions and crushed garlic to the pressure cooker and saute for about 2 to 3 minutes until the onions are soft and translucent. Add the dried thyme and stir.
Pour in a little chicken stock to deglaze the base, using a wooden spoon to scrape up any browned bits. Leave the brown bits in the base of the pot as they add more flavour to the dish.
Stir in the Worcestershire sauce, Dijon mustard, apple cider vinegar, and brown sugar.
Return the pork chops to the pot and add the slices of apple.
Put the lid on the pressure cooker and choose the pressure cooker function. Cook on high pressure for 10 minutes.
Once the cooking time is up, let the pressure cooker naturally release for 10 minutes, then do a quick release for any remaining pressure.
Carefully open the lid. Serve alongside your favourite sides (rice or potatoes are good options with some green vegetables).
