This quick and easy salt and pepper chicken stir fry combines lightly crisp chicken with colourful peppers, onion, garlic and chilli. It is packed with flavour and perfect served with rice or noodles.

Ingredients
400gboneless chicken thighsor chicken breasts, cut into bite-sized pieces
2tbspcornflour
1tbspChinese five-spice
1tspfine salt
1tspground white pepper
1tbspsunflower oil
1onionsliced
1/2red pepperdeseeded and sliced
1/2green pepperdeseeded and sliced
1/2tspdried chilli flakes
3garlic clovescrushed
4spring onionssliced
2tsptoasted sesame oil
Instructions
Add the Chinese five-spice, salt, white pepper and black pepper to a small bowl and mix together.
Place the chicken in a bowl and add the cornflour and half of the seasoning mixture. Toss until the chicken is evenly coated.
Heat 1 tablespoon of the sunflower oil in a large frying pan or wok over a medium-high heat.
Add half the chicken and stir-fry for 5 to 7 minutes, or until golden, lightly crisp and cooked through. Transfer the chicken to a plate and repeat with the remaining chicken, adding a little more oil if required.
Add the remaining sunflower oil to the pan, followed by the onion and peppers. Stir-fry for 3 to 4 minutes, keeping the vegetables slightly crisp.
Add the chillies, garlic and most of the spring onions. Stir-fry for a further minute.
Return all the chicken to the pan. Sprinkle over the remaining seasoning mixture and toss everything together.
Add the toasted sesame oil and stir-fry for another 1 to 2 minutes, or until the chicken is piping hot.
Taste and add a little extra salt or pepper if required. Scatter over the reserved spring onions and serve immediately.
Notes
Chicken thighs remain particularly juicy, but chicken breast also works well.
Cook the chicken in batches so that it browns rather than steaming.
Use one chilli or remove the seeds for a milder stir fry.
