Ingredients
150gchorizocut into 1cm slices
2red onionssliced
2clovesgarliccrushed
2red or yellow peppersdeseeded and chopped
2x 400g tin of chopped tomatoes
1chicken stock pot or cube + 50 ml hot water
2tspsmoked paprika
8boneless chicken thighs
Fresh flat leaf parsley - optional garnish
Instructions
Dissolve the stock pot or cube in 50ml of boiling water.
Add all the ingredients to the slow cooker, including the stock, and gently stir until combined.
Put the lid on and set the slow cooker off on low for 6 to 8 hours or high for 4 hours.
Check the chicken is cooked through at the end of the cooking time.
If the sauce is too thin, remove the chicken and set it to one side. Mix 1 tbsp of cornflour with 2 tbsp water and mix in the sauce. If you don't have any cornflour, leave the lid off the slow cooker for 30 minutes (with the chicken still in).
