Juicy sausages cooked in a rich tomato curry sauce with onions, carrots, and peas. An easy slow cooker family dinner that’s perfect served with mashed potatoes or rice.
Lightly brown the sausages in a frying pan, under the grill, or in the air fryer. This step is optional but recommended for better flavour and texture.
Add the browned sausages to the slow cooker.
Add the onions, carrots, garlic, curry powder, stock, Worcestershire sauce, and chopped tomatoes.
Cover with the lid and cook on HIGH for 3 to 4 hours or LOW for 4 to 6 hours.
Around 20 minutes before serving, remove the sausages and cut into chunks (or you can leave them whole if you prefer).
If the sauce is too thin, mix the cornflour with the cold water until smooth. Stir into the hot sauce.
Add the frozen peas and cream if using, return the sausages to the slow cooker and cook on HIGH for a further 15 to 20 minutes until thickened. Leave the lid off if needed.
