Ingredients
1kggammon jointor weight according to how many you are serving
1onionchopped
2carrotspeeled and chopped
1.75L– 2L coke
Instructions
Place the gammon joint in the slow cooker with the chopped carrots and onion. Pour the bottle of Coke over the top.
Place the lid on the slow cooker and cook on low for 6 to 8 hours or high for 4 hours.
At the end of the slow cooking time, the gammon should be cooked all the way through; the internal temperature should reach a minimum of 65°C.
When the gammon is ready, remove it from the liquid and leave it to stand before carving it to serve or add a glaze and put it in the oven or air fryer (see next step).
If you decide to glaze and roast the slow-cooked gammon, preheat your oven to 190°C/170°C fan/gas 5, or an air fryer if using (180°C).
Score the gammon joint with a sharp knife and rub some honey over it. Alternatively, you could use maple syrup and some ground cloves or cinnamon as a glaze.
Place the scored and glazed gammon in the oven or air fryer and cook for 15 minutes in the oven or 8 minutes in the air fryer or until the skin is crisped up to your liking.
