These easy oatmeal raisin cookies are soft in the middle, lightly golden around the edges and packed with rolled oats, raisins and cinnamon. Perfect for a homemade sweet treat.

Ingredients
125gsalted buttersoftened
100glight brown soft sugar
50gcaster sugar
1egg
1tspvanilla extract
150gplain flour
½tspbicarbonate of soda
1tspground cinnamon
150grolled oats
125graisins
Instructions
Beat the softened butter, light brown sugar and caster sugar together until smooth and creamy.
Add the egg and vanilla extract and beat until combined.
In a separate bowl, mix together the plain flour, bicarbonate of soda, cinnamon and salt. Stir into the butter mixture until just combined.
Fold in the rolled oats and raisins. Cover the bowl and refrigerate for 30 minutes.
Preheat the oven to 180°C (160°C fan) and line two baking trays with baking paper.
Divide the dough into approximately 18 portions. Roll loosely into balls and place on the trays, leaving about 5cm between each one. Gently flatten into thick discs, approximately 1.5cm thick.
Bake for 10–12 minutes, until the edges are lightly golden and the centres still look soft.
Leave the cookies on the baking trays for 10 minutes before carefully transferring them to a wire rack to cool completely.
