Ingredients
1onionchopped
2clovesgarlicsliced
1carrotsliced (approx 75g)
100gred lentilsrinsed
4 to 6fresh tomatoesI used on the vine, chopped
1vegetable stock pot/cube
Seasoning according to taste
Instructions
Optionally saute the onions and garlic in a little oil.
Add all the ingredients to the soup maker and make sure you give it a good stir round and ensure no ingredients are stuck to the bottom.
Set off on smooth.
Season according to taste.

There is no need to soak the red lentils; wash them under a cold water tap.The tomatoes you use will affect your soup taste; I prefer to use on the vine tomatoes; I tend to use between 4 and 6 tomatoes, depending on their size.If you don't have fresh tomatoes, you can substitute them with a can of chopped tomatoes.I use a vegetable stock pot because I find they have more flavour than the cubes. If you are using a cube, you might want to add some dried herbs or spices to boost the taste.
