Ingredients
75gdried apricots(just under 1/2 cup)
4tbsporange juice
75gself-raising flour(3/4 cup)
40gSugar(1/3 cup)
1egg
75gRaisins(just under 1/2 a cup)
Instructions
Preheat air fryer to 160C/320F
In a blender or food processor blend the dried apricots and juice until they are smooth.
In a separate bowl, mix together the sugar and flour.
Beat the egg. Add it to the flour and sugar. Mix together.
Add the apricot puree and raisins. Combine together.
Spray an air fryer safe baking tin with a little oil. Transfer the mixture over and level off.
Cook in the air fryer for 12 minutes, check it at 10 minutes. Use a metal skewer to see if it is done. If need be, return the cake to the air fryer to cook for a few more minutes to brown up.
Allow to cool before removing from the baking tin and slicing up.
