Enjoy this hot pepper and lemon chicken recipe for your air fryer. This one uses a handful of spices combined with lemon, honey, vinegar and olive oil.
In a bowl, mix the lemon juice, lemon zest, olive oil, honey, salt, black pepper, smoked paprika, cumin, chilli powder, garlic powder, cayenne pepper and vinegar.
Cover the chicken with the above mixture and if you have time, leave it to marinade for 30 minutes.
For this recipe I cooked it in an oven safe bowl in the air fryer basket but you can also air fry it straight in the basket (you may need to shake off any excess mixture), or, in a loose foil packet.
Set the air fryer off at 180°C for 15 to 18 minutes, turning the chicken over half way. I used the 'roast' function, but you can also use the 'air fryer' function.
At 15 minutes check if the chicken is done by either using a meat thermometer, it should have reached 75°C at the thickest part of the meat, or, cut in to it to check it is cooked all the way through. Return to cook for longer if required.
Serve sliced in a wrap with salad, or with your favourite sides for a larger meal.
