Air Fryer Hot Pepper and Lemon Chicken

The combinations of flavours you can use to make a tasty chicken recipe for your air fryer are plentiful. This one uses a handful of spices I had in my spice rack combined with lemon, honey, vinegar and olive oil.

What You Need

The quantities below are enough for four servings. If you want to make more or less you can adjust the ingredients accordingly.

  • 4 chicken breasts
  • 3 tbsps lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp olive oil (I love using garlic infused!)
  • 1 tsp apple cider vinegar or white wine vinegar
  • 1 tbsp honey
  • 1 tsp each of salt and 1 tsp ground black pepper
  • ½ tsp each: smoked paprika, cumin powder, chilli powder, garlic powder, cayenne pepper

Making It

I used the ‘roast function’ in a Cosori air fryer, but you can use any air fryer and if you prefer, use the air fryer function instead.

Start by preparing the marinade. In a bowl, mix the lemon juice, lemon zest, olive oil, honey, salt, black pepper, smoked paprika, cumin, chilli powder, garlic powder, cayenne pepper and vinegar.

When I’m air frying chicken, I either add the chicken directly to the air fryer, pop them in a foil pocket, or, as you’ll see in this recipe, an oven safe dish.

I poured the above prepared marinade over the raw chicken breasts in an oven safe bowl.

Note: you can also make this recipe in a foil packet, or directly in the air fryer.

If you have time, for a more intense flavour, leave the chicken to marinate for 30 minutes.

Next, switch the air fryer on, I used the ‘roast’ function, but if your air fryer doesn’t have that option, you can also use the air fryer function.

Set the temperature to 180°C (360°F) and cook for 15 to 18 minutes, turning over halfway. At the end of the cooking time, check the chicken is cooked through. I prefer to use a meat thermometer to check the internal temperature which should have reached 75°C (165°F).

Note: I love using these gloves for easily grabbing bowls and dishes out of the air fryer, they make it easy to grab hot dishes and prevent any burns.

I sprinkled some fresh chopped parsley over mine, you can use any herbs you prefer, or alternatively serve as it is.

And that’s it – a super simple air fryer recipe that’s perfect for a snack (it taste’s great sliced in a wrap with some lettuce), or as part of a main meal.

Instructions
 

  • In a bowl, mix the lemon juice, lemon zest, olive oil, honey, salt, black pepper, smoked paprika, cumin, chilli powder, garlic powder, cayenne pepper and vinegar.
  • Cover the chicken with the above mixture and if you have time, leave it to marinade for 30 minutes.
  • For this recipe I cooked it in an oven safe bowl in the air fryer basket but you can also air fry it straight in the basket (you may need to shake off any excess mixture), or, in a loose foil packet.
  • Set the air fryer off at 180°C for 15 to 18 minutes, turning the chicken over half way. I used the 'roast' function, but you can also use the 'air fryer' function.
  • At 15 minutes check if the chicken is done by either using a meat thermometer, it should have reached 75°C at the thickest part of the meat, or, cut in to it to check it is cooked all the way through. Return to cook for longer if required.
  • Serve sliced in a wrap with salad, or with your favourite sides for a larger meal.
