A quick and easy Mediterranean-style omelette made in the air fryer with courgette, tomatoes, mozzarella and herbs. Perfect for breakfast, lunch or a light dinner.

Ingredients
4eggs
50gcourgettefinely diced
3cherry tomatoeschopped
50gmozzarellagrated
1tspgarlic powder
1tspdried mixed herbs
Olive oil spray
Instructions
Lightly grease a 6–7 inch ovenproof tin with olive oil spray and place in the air fryer basket. Preheat the air fryer to 180°C.
Beat the eggs in a bowl.
Stir in the courgette, cherry tomatoes, garlic powder, mixed herbs and the mozzarella.
Pour the mixture into the prepared tin in the air fryer.
Cook at 180°C for 8–10 minutes.
The omelette is ready when the eggs are set and the top is lightly golden.
Carefully remove from the air fryer and enjoy warm or cold.
