Air Fryer Mediterranean Style Omelette (Frittata)

If you’re looking for a quick, healthy meal that’s packed with protein and flavour, this Mediterranean-style air fryer omelette is a great one to try.

Made with eggs, courgette, tomatoes and mozzarella, it’s simple to prepare and cooks in under 10 minutes in the air fryer. It’s perfect for breakfast, lunch, a light dinner, or even meal prep if you want something ready to grab from the fridge later.

To make this air fryer omelette you’ll need eggs, courgette, cherry tomatoes, mozzarella, garlic powder, mixed herbs and a little olive oil spray.

You’ll also need a small ovenproof tin that fits inside your air fryer basket.

How To Make It

Start by preheating your air fryer and lightly greasing a small baking tin with olive oil spray.

Beat the eggs in a bowl before stirring in the chopped courgette, tomatoes, herbs, garlic powder and mozzarella.

Pour the mixture into the prepared tin, making sure the vegetables are evenly distributed throughout.

Cook in the air fryer until the eggs are set and the top is lightly golden. The exact cooking time can vary slightly depending on your air fryer model, so it’s worth checking towards the end of the cooking time.

Once cooked, carefully remove the tin from the air fryer and allow it to rest for a minute before serving.

Variations

This recipe is easy to adapt depending on what you have available.

  • Swap the mozzarella for feta cheese for a more traditional Mediterranean flavour.
  • Use sun-dried tomatoes instead of fresh tomatoes for a richer taste.
  • Add some spinach, olives or roasted peppers.
  • Sprinkle over some chilli flakes for extra heat.
  • Serve with a simple salad for a more substantial meal.

Storage

Any leftovers can be stored in an airtight container in the fridge for up to 2 days.

This omelette can be eaten cold, making it ideal for lunchboxes or meal prep. To reheat, place it back in the air fryer for a few minutes until warmed through.

Ingredients
  

  • 4 eggs
  • 50 g courgette finely diced
  • 3 cherry tomatoes chopped
  • 50 g mozzarella grated
  • 1 tsp garlic powder
  • 1 tsp dried mixed herbs
  • Olive oil spray

Instructions
 

  • Lightly grease a 6–7 inch ovenproof tin with olive oil spray and place in the air fryer basket. Preheat the air fryer to 180°C.
  • Beat the eggs in a bowl.
  • Stir in the courgette, cherry tomatoes, garlic powder, mixed herbs and the mozzarella.
  • Pour the mixture into the prepared tin in the air fryer.
  • Cook at 180°C for 8–10 minutes.
  • The omelette is ready when the eggs are set and the top is lightly golden.
  • Carefully remove from the air fryer and enjoy warm or cold.
