Cooking vegetables in the air fryer is the perfect way to enjoy some side dishes. Use up the vegetables you have available, sprinkle with some oil and mixed dried herbs and if you fancy, sprinkle some cheese on top before serving. Delicious!

Ingredients
1courgettesliced into rounds and then cut in half
2bell pepperschoose different colours for variety, deseeded and cut into chunks
1red onionsliced into wedges
A handful of cherry tomatoeswhole
2tbspolive oil
1tspdried oregano
1/2tspgarlic powder or 2 crushed garlic cloves
Salt and pepperto taste
Fresh basil or parsleychopped (optional for garnish)
crumbled feta cheeseoptional, for serving
Lemon wedgesfor serving
Instructions
Prepare all the ingredients by washing and chopping them into chunks.
Once you have prepared all the ingredients, add them to a large mixing bowl and sprinkle with olive oil followed by the herbs and spices.
Transfer to the air fryer basket and cook at 200°C/400°F for 15 to 20 minutes.
Check on them at around 10 minutes and give them a good shake. They will be ready when the vegetables are soft and beginning to char slightly around the edges.
Optionally crumble some cheese (I used feta cheese) over the vegetables for the last 5 minutes.
