Air Fryer Mediterranean Vegetables

Cooking vegetables in the air fryer is the perfect way to enjoy some side dishes. Use up the vegetables you have available, sprinkle with some oil and mixed dried herbs and if you fancy, sprinkle some cheese on top before serving. Delicious!

What You Need

To make a mediterranean vegetable side dish choose from courgettes, peppers, onions, garlic, aubergines, tomatoes – customise it according to your tastes and availability!

I used:

  • 1 courgette (zucchini), sliced into rounds and then cut in half
  • 2 bell peppers, choose different colours for variety, deseeded and cut into chunks
  • 1 red onion, sliced into wedges
  • A handful of cherry tomatoes, whole
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder or 2 crushed garlic cloves
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Crumbled feta cheese (optional), for serving
  • Lemon wedges, for serving

Making It

Once you have prepared all the ingredients, add them to a large mixing bowl and sprinkle with olive oil followed by the herbs and spices.

Transfer to the air fryer basket and cook at 200°C/400°F for 15 to 20 minutes.

Check on them at around 10 minutes and give them a good shake. They will be ready when the vegetables are soft and beginning to char slightly around the edges.

Optionally crumble some cheese (I used feta cheese) over the vegetables for the last 5 minutes.

We enjoyed ours as a side with lasagne and some garlic doughs balls I had cooked in the air fryer.

Mediterranean veg brilliant. Using up what was in the fridge, mine was tomatoes, peppers, mushrooms, a largw salad onion, courgette and also a potato sliced into smallish pieces. All did in just over 10 minutes - looks and tastes lovely. Next time I'll be less heavy on the oil - it really desn't need much at all.
