Cooking a lamb joint in the air fryer is a fantastic way to get a beautifully roasted piece of meat that’s succulent on the inside and perfectly browned on the outside.
Leave the lamb out at room temperature for around 30 minutes before air frying.
Pat the lamb dry with some paper kitchen towel.
In a small bowl mix together the olive oil, crushed garlic, chopped rosemary and thyme.
Rub this mixture over the lamb joint, making sure it's well-coated.
Place the lamb in the air fryer basket - make sure there is enough room between the top of the lamb and the heating element of the air fryer. Remove any grill at the bottom of the basket if possible to give more space.
Air fry at 180°C for 35 minutes, check on it a few times during the cooking time to check how quickly it is cooking. It's best to use a digital thermometer to check the internal temperature. I cooked mine for 35 minutes and the result was medium-rare (63°C). If you prefer your lamb cooked more, air fry for longer. For medium the internal temperature should read 68°C and for well done it should read 72°C.
When the lamb is cooked to your liking, remove it from the air fryer basket and leave to rest for around 10 minutes before carving.
