Cooking a lamb joint in the air fryer is a fantastic way to get a beautifully roasted piece of meat that’s succulent on the inside and perfectly browned on the outside.
Here’s how to cook a delicious air-fried roast leg of lamb, seasoned with herbs and garlic.
What You Need
- Lamb joint – leg or shoulder, about 1kg depending on the size of your air fryer (check that it fits!) I used a Tesco Lamb Leg Half weighing 1.395 kg
- Olive oil
- Garlic – I used 4 cloves
- Herbs – I used 2 teaspoons fresh rosemary and 1 teaspoon of fresh thyme
- Salt and pepper to taste

Pat The Lamb Dry
Use some paper towels to pat dry any excess moisture. This helps the seasonings stick to the meat and ensures a crispy exterior.
Season The Lamb
In a small bowl, mix together the olive oil, crushed garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the lamb joint, making sure it’s well-coated.

Place the lamb in the air fryer basket. I started with it on the air fryer grill but after about 10 minutes I removed it as the top was cooking too quickly as it was too close to the heating elements. Whether you need to do this or not will depend on your air fryer and size of lamb joint – just keep an eye on it during the cooking time.
Set the air fryer off at 180°C for 30 minutes. I cooked my half leg of lamb for 35 minutes and the internal temperature was 63°C/145°F which is medium-rare.
If you want your lamb more well done cook for a little longer, using a digital thermometer to check the temperature:
- 63°C/145°F – medium-rare
- 68°C/154°F – medium
- 72°C/162°F – well-done
Once the lamb is cooked to your liking remove it from the air fryer basket and leave it to rest for about 10 minutes before slicing.
Slice the lamb and serve with your choice of sides. Good options include roasted vegetables, a simple salad, or mint sauce for a traditional touch.

Air Fryer Roast Leg of Lamb Recipe
Ingredients
- 1.4 kg half leg of lamb
- 2 tbsp olive oil
- 4 cloves garlic crushed
- 2 tsp fresh rosemary finely chopped
- 1 tsp fresh thyme finely chopped
Instructions
- Leave the lamb out at room temperature for around 30 minutes before air frying.
- Pat the lamb dry with some paper kitchen towel.
- In a small bowl mix together the olive oil, crushed garlic, chopped rosemary and thyme.
- Rub this mixture over the lamb joint, making sure it's well-coated.
- Place the lamb in the air fryer basket – make sure there is enough room between the top of the lamb and the heating element of the air fryer. Remove any grill at the bottom of the basket if possible to give more space.
- Air fry at 180°C for 35 minutes, check on it a few times during the cooking time to check how quickly it is cooking. It's best to use a digital thermometer to check the internal temperature. I cooked mine for 35 minutes and the result was medium-rare (63°C). If you prefer your lamb cooked more, air fry for longer. For medium the internal temperature should read 68°C and for well done it should read 72°C.
- When the lamb is cooked to your liking, remove it from the air fryer basket and leave to rest for around 10 minutes before carving.
