This slow cooker beef brisket recipe is fall apart tender and full of flavour. Brisket is the perfect cut of meat to cook in a slow cooker, set it off low and slow and serve it with your favourite sides – I love it with mashed potato and peas, saving any leftovers to put in a sandwich or roll – yum!

Ingredients For Slow Cooker Beef Brisket
- 1kg to 2kg beef brisket – the size of your beef brisket won’t change the cooking time, just cook it low and slow
- 150ml of beef stock – made from 1 beef stock pot
- 2 tbsp Worcestershire sauce
- 4 cloves garlic, crushed
- 1 onion, chopped
- 6 sprigs of fresh thyme
- 2 tbsp fresh rosemary, chopped
- 1 tsp each of salt and pepper
Making Beef Brisket In A Slow Cooker
Start by seasoning the beef with the salt and pepper. Then mix the Worcestershire sauce in with the beef stock.
Place the beef joint directly in the slow cooker followed by the onions and garlic. Next pour over the stock and Worcestershire sauce.
Finally, sprinkle the fresh herbs over the top and around the beef joint.

Place the lid on the slow cooker and set off on low for 8 to 10 hours. I don’t recommend cooking beef brisket on high – this cut of beef comes out best when it is cooked slowly and on the lowest setting.
At the end of the slow cooking time remove the lid and take out the thyme.
Using two forks shred the beef – you could also remove the beef from the slow cooker to shred it if you find it easier.
Mix the shredded beef in with the stock and juices, this will help to keep the meat tender and prevent it from drying out.
I love slow cooked beef brisket with some mashed potatoes and peas and then any leftovers in a brioche bun, much like I do with slow cooked pulled pork.

- At the end of the cooking time the beef should be soft and tender and easy to pulled apart with two forks. Remove the thyme sprigs before you do this. You can shred the beef in the slow cooker or if you prefer remove it. Once the beef has been shredded stir it in with the stock and juices.
- Serve with mashed potatoes and peas and save any leftovers to enjoy in a roll.
