Ingredients
150glight brown sugar
150gunsalted butter softened
150mlmilk
2eggsbeaten
250gself-raising flour
1tspbaking powder
2tspground cinnamon
1/2tspsalt
2applesapprox 250g in weight once peeled and cored
Instructions
Preheat the oven to 200C/180C Fan/Gas Mark 6.
In a bowl, cream together the butter and sugar.
Stir in the milk and beaten eggs.
In a seperate bowl, sift the flour and mix in the baking powder, cinnamon and salt.
Add in the wet ingredients and gently mix until combined.
Peel the apples and chop the apples into small cubes, alternatively you can grate the apples if you prefer not to have chunks in the muffins.
Gently stir the apple in with the batter mix.
Transfer the batter to the muffin cases, filling each one up almost to the top. There should be enough batter for 12 muffins.
Optionally sprinkle with a little brown sugar before placing in the oven for 5 minutes. After 5 minutes, turn the heat down to 180C/160C Fan/Gas Mark 4.
Leave to stand for 5 to 10 minutes before serving.
