Ingredients
150glight brown sugar
150gunsalted buttersoftened
150mlsemi-skimmed milk
2eggsbeaten
250gself-raising flour
1tspbaking powder
2tspground cinnamon
½tspsalt
2applesapproximately 250 g once peeled and cored
A little extra light brown sugar for toppingoptional
Instructions
Preheat the oven to 200°C/180°C fan/Gas Mark 6. Line a 12-hole muffin tin with muffin cases.
Cream the softened butter and sugar together until light and fluffy.
Gradually stir in the milk and beaten eggs.
In a bowl, sift the flour and mix in the baking powder, cinnamon and salt.
Add the wet ingredients to the dry ingredients and gently mix until just combined.
Peel and core the apples. Chop them into small cubes, or grate them, then gently fold them into the batter.
Divide the batter between the 12 muffin cases, filling each one almost to the top. Sprinkle with a little extra brown sugar, if using.
Bake for 5 minutes, then reduce the oven temperature to 180°C/160°C fan/Gas Mark 4. Bake for a further 20 minutes, until golden and a skewer inserted into the centre comes out without wet batter.
Leave in the tin for 5 to 10 minutes, then transfer to a wire rack. Serve slightly warm or allow to cool completely.
Notes
Use muffin-sized cases rather than smaller cupcake cases.
Avoid overmixing once the flour has been added.
Store cooled muffins in an airtight container in a cool place for 2 to 3 days, or freeze for up to 3 months.
