Banana muffins are so delicously yummy you might just need to hide them from the kids!

Ingredients
2medium ripe bananasmashed
150gbuttermelted
2medium eggsbeaten
1tspvanilla extract
3tbspmilk
250gself raising floursifted
100glight brown sugar
1tspbaking powder
1tspbicarbonate of soda
1tspground cinnamon
Instructions
Preheat the oven to 200C (gas mark 6)
In a bowl, mix together the mashed bananas, melted butter, beaten eggs, vanilla extract and milk.
In a separate bowl, mix together the self raising flour, light brown sugar, baking powder, bicarbonate of soda and ground cinnamon.
Make a well in the centre of the dry ingredients and pour the wet ingredients from step 2 in the middle.
Gently combine the ingredients until they are mixed together. Don't over mix.
Line a tray with 12 muffin cases.
Fill each muffin case with the banana muffin batter, filling each one almost up to the top.
Bake in the preheated oven for 5 minutes and then turn the heat down to 180C (gas mark 4) and cook for a further 15 to 20 minutes. When the banana muffins are ready they will be golden brown and have risen above the muffin case.
Transfer to a wire rack to cool. Banana muffins also taste amazing when they are still warm!
Notes
Optional extras: try adding in some chocolate chips or your favourite nuts (chopped) for a bit of variation!
