Ingredients

plain flour

ripe bananas
Instructions
Mix the beaten egg with the milk and vegetable oil.
In a separate bowl mash the bananas with a potato masher, or, a fork.
Stir the mashed banana in with the egg and milk mixture.
Sift the flour into the wet mixture and add the salt.
Gently stir everything together. The batter will remain lumpy due to the mashed banana.
Heat up a little oil in a suitable sized frying pan and pour a ladle full (very roughly 50 – 60ml) of pancake mixture into the hot pan.
Fry for about 3 to 5 minutes on either side – until the pancakes is set and starting to brown and is cooked all the way through.
Remove from the pan and set to one side while you cook the remaining pancakes.
Serve with pancake toppings of your choice.
