Bara Brith is a delicious Welsh recipe made from dried mixed fruit soaked in tea. Perfect sliced with some butter, or eaten on its own!

Ingredients
400gmixed fruit
300mlstrong hot teafrom 2 or 3 teabags
250gself-raising flour
1tspmixed spice
100gdark brown muscovado sugar
1free range eggbeaten
Instructions
Add the dried fruit to a bowl and pour the hot tea over it. Stir the sugar in until it is well mixed.
Leave it to soak for at least 6 hours, or overnight.
Preheat the oven to 180°C /Gas 4*
Sift the flour and mixed spices and combine with the fruit mixture, together with the beaten egg and stir.
Transfer to a greased or lined loaf tin and put in the oven. Cook for 1 hour. Check on it at 30 minutes and cover with foil if the top is cooking too quickly.
After 1 hour remove the Bara Brith from the oven and check it is cooked through.
Leave to cool on a wire rack before sliding it out.
Once it has cooled, slice and serve.
Optionally store it for 2 days before eating to allow the flavour to develop some more.
Notes
* I found the Bara Brith cooked quite quickly at this temperature so next time I will cook at a lower heat.Thanks to Visit Wales for this recipe!
