A simple, vibrant soup with a naturally earthy flavour and a gentle sweetness. There’s no peeling and very little prep, just add everything to the soup maker and let it do the work.
500graw beetroot*trimmed and roughly chopped (no need to peel)
150gpotatoapprox, roughly diced (no need to peel)
½teaspoondried thyme
¼ground black pepper
800mlvegetable stock
Instructions
Add ingredients to the soup maker. If you have a Ninja soup maker you can use the chop function to chop the onion and garlic.
Add the beetroot and potato to the jug, then pour in the stock. Sprinkle in the dried thyme.
Select the Smooth Soup programme and leave the soup maker to cook and blend the soup.
Once finished, taste and adjust the seasoning if needed. If the soup is thicker than you like, simply loosen it with a splash of hot water or stock.
Notes
*I used 500g of beetroot which resulted in quite a thick soup and so I thinned it out at the end with some more hot water. Feel free to use between 400g and 500g of beetroot depending on how thick you like your soups.
