Simple Beetroot Soup in a Soup Maker

A simple, vibrant soup that’s perfect for the soup maker. This easy beetroot soup has a naturally earthy flavour, a little sweetness, and a beautifully smooth texture.

There’s no peeling required and very little prep, just add everything to the jug, press a button, and let the soup maker do the rest.

What You Need

Below is a quick overview of what you’ll need. Scroll down to the recipe card for the full ingredient list and exact measurements.

You’ll need a handful of simple ingredients: onion and garlic for flavour, raw beetroot and potato for body and colour, dried thyme and black pepper for gentle seasoning, and vegetable stock to bring everything together. There’s no need to peel the beetroot or potato, which keeps prep to a minimum.

Preparing the Beetroot

There’s no need to peel the beetroot for this soup. Simply give it a really good wash, trim off any tough ends, and roughly chop it. The skin softens as it cooks and blends smoothly in the soup maker, so nothing goes to waste.

If your beetroot still has the leaves and stalks attached, you can include those too. Just wash them well and roughly chop them before adding to the jug. The soup maker blends everything down beautifully, adding extra nutrients and helping create a smooth, vibrant soup with very little extra effort.

Note: As I’m sure you know, beetroot can stain your hands and chopping board, so you may want to use gloves or a lined board when preparing it.

How to Make It

Start by adding the onion and garlic to your soup maker. If you’re using a Ninja Soup Maker, you can use the Chop function to break them down slightly before cooking.

Add the beetroot and potato to the jug, then pour in the vegetable stock. Sprinkle over the dried thyme and black pepper.

Select the Smooth Soup programme and leave the soup maker to cook and blend the soup until it’s completely smooth.

Once finished, taste and adjust the seasoning if needed. If the soup is thicker than you like, simply loosen it with a splash of hot water or extra stock until it reaches your preferred consistency.

I used 500g of raw beetroot and it came out a little thick so I added some more hot water at the end and gave it a quick blend. Either use less beetroot (around 400g) or wait until the end and see whether the consistency is as you like it.

Variations & Tips

  • You can swap dried thyme for dried mixed herbs if that’s what you have.
  • For extra warmth, add a small pinch of ground ginger or cumin.
  • If you prefer a slightly sweeter soup, a small carrot works well alongside the beetroot.
  • This soup can also be made chunky by using the Chunky Soup programme instead.

Storage & Reheating

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently on the hob or in the microwave until piping hot.
  • This soup freezes well for up to 3 months. Defrost overnight in the fridge before reheating.

Ingredients
  

  • 1 onion chopped
  • 1 clove garlic clove roughly chopped
  • 500 g raw beetroot* trimmed and roughly chopped (no need to peel)
  • 150 g potato approx, roughly diced (no need to peel)
  • ½ teaspoon dried thyme
  • ¼ ground black pepper
  • 800 ml vegetable stock

Instructions
 

  • Add ingredients to the soup maker. If you have a Ninja soup maker you can use the chop function to chop the onion and garlic.
  • Add the beetroot and potato to the jug, then pour in the stock. Sprinkle in the dried thyme.
  • Select the Smooth Soup programme and leave the soup maker to cook and blend the soup.
  • Once finished, taste and adjust the seasoning if needed. If the soup is thicker than you like, simply loosen it with a splash of hot water or stock.

Notes

*I used 500g of beetroot which resulted in quite a thick soup and so I thinned it out at the end with some more hot water. Feel free to use between 400g and 500g of beetroot depending on how thick you like your soups.
