This air fryer sausage tray bake is an easy, one-basket dinner that’s perfect for busy evenings. Sausages, potatoes, onions and peppers all cook together in the air fryer, so you get a full meal with very little prep and hardly any washing up at the end.

What You Need

- Pork sausages or chipolatas – use your favourite style; just adjust the cooking time depending on how thick they are
- New or baby potatoes – they hold their shape well and go lovely and crisp around the edges in the air fryer
- Red onion – adds sweetness and soft, caramelised edges as it cooks
- Peppers – bring colour and extra flavour to the tray bake
- Olive oil – helps the potatoes and veg brown and stops them drying out
- Smoked paprika – adds a gentle smoky flavour and a bit of colour
- Garlic granules – give you garlic flavour without the risk of fresh garlic burning
- Salt and black pepper – to season everything and bring the flavours together
How to Make It
Start by getting the potatoes on first, as they need a head start before the sausages and veg go in. I add the potatoes to a large bowl and toss them with the olive oil, smoked paprika, garlic granules, salt and black pepper until they’re evenly coated.

Once they’re well seasoned, tip the potatoes into the air fryer basket in as even a layer as possible.
Set the temperature and let them cook until they’re just starting to soften and take on a little colour, giving the basket a shake partway through so they don’t stick and they crisp up more evenly.

While the potatoes are cooking, slice the red onion and peppers and get the sausages ready. When the potatoes have had their initial cook, add the sausages straight into the basket along with the sliced onion and peppers. Gently mix everything together in the basket so the vegetables pick up the leftover oil and seasoning from the potatoes.

From there, put the basket back in the air fryer and cook until the sausages are cooked through and the potatoes are golden and tender. I check once halfway through and give everything another shake so nothing sits in one spot for too long.
As soon as the sausages are done and the potatoes look nicely crisped, serve the tray bake hot straight from the basket.
Variations & Tips
- Use chipolatas for a quicker cook, standard sausages for a classic tray bake, or thicker sausages if you prefer – just allow extra time as needed
- Veggie or chicken sausages work well too; follow the packet guidance and reduce the cooking time if they tend to cook faster
- Swap or add extra vegetables such as courgette, mushrooms or cherry tomatoes, depending on what you have
- Sprinkle grated cheese over the top for the last couple of minutes of cooking for a cheesy finish
- Serve with ketchup, mustard, BBQ sauce or your favourite dips on the side
- If your air fryer basket is on the smaller side, cook in two batches so the potatoes can crisp rather than steam
- Always check that sausages are fully cooked through before serving, with no pink in the centre

Storage & Reheating
- Let any leftovers cool before transferring them to an airtight container
- Store in the fridge and use within 2 days for the best texture and flavour
- Reheat in the air fryer until everything is piping hot and the potatoes have crisped back up
- You can reheat in the microwave if you’re short on time, but the potatoes will be softer
- Leftover sausages and vegetables are great sliced up and added to wraps, omelettes or salads the next day

Air Fryer Sausage Tray Bake

Ingredients
- 12 chipolata pork sausages see notes
- 500 g baby potatoes halved
- 1 red onion sliced
- 1 pepper sliced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic granules
- Salt and black pepper to taste
Instructions
- Add the potatoes to a large bowl and toss with the olive oil, smoked paprika, garlic granules, salt and black pepper until well coated.
- Transfer the potatoes to the air fryer basket and cook at 200°C for 10 minutes, shaking halfway through if needed.
- Add the sausages, sliced onion and peppers to the basket. Gently toss everything together so the vegetables are coated in the oil and seasoning.
- Return the basket to the air fryer and cook for a further 10–15 minutes, shaking once halfway through, until the sausages are cooked through and the potatoes are golden and tender.
Notes
- Chipolatas usually take 10–12 minutes after adding to the basket.
- Standard pork sausages take 12–15 minutes, and thicker sausages may need 15–18 minutes. If you are using larger pork sausages you may want to decrease the amount used compared to the chipolatas.
- Always ensure sausages are fully cooked through with no pink in the centre.
- This recipe works best in a large air fryer basket (5–6L or bigger). If your air fryer is smaller, cook in batches to avoid overcrowding.
- Veggie sausages can be used — check the packet instructions and reduce the cooking time if needed.
