1 vegetable stock pot/cube + hot water up to the line

Instructions
I reserved half the rocket and then added all the remaining ingredients to the soup maker, including the vegetable stock pot/cube. Add hot water up to the MAX line.
Set the soup maker off on smooth.
At the end of the soup maker cycle serve add the remaining rocket and manually blend. Season according to taste.
Optionally stir in some cheese at the end, or, a little green pesto.
