Broccoli and Rocket Soup Maker Soup

Ingredients
- 1 onion chopped
- 2 cloves garlic crushed
- 400 - 600 g broccoli chopped
- 60 g rocket leaves
- 1 vegetable stock pot/cube + hot water up to the line
- salt and pepper according to taste
Instructions
- I reserved half the rocket and then added all the remaining ingredients to the soup maker, including the vegetable stock pot/cube. Add hot water up to the MAX line.
- Set the soup maker off on smooth.
- At the end of the soup maker cycle serve add the remaining rocket and manually blend. Season according to taste.
- Optionally stir in some cheese at the end, or, a little green pesto.
