Broccoli and Rocket Soup Maker Soup

Add a hint of peppery flavour to your broccoli soup with this broccoli and rocket soup. Stir in some grated cheese at the end, or a spoonful of pesto, it’s a delicous and healthy tasting soup.

What You Need

The ingredients below are an approximate guide, feel free to add more or less of each according to what you have available.

Broccoli

I added 600g of chopped broccoli. I used the whole head including the stalk. Chop it up as small as you can so that you can fit it all in the soup maker jug.

Rocket

I used 60g of rocket. The recipe in my 150+ soup maker recipe book calls for 100g of rocket, but I didn’t have enough. The great thing with soup is that there are no strict rules with quantities – just use up what you have available.

Onion and Garlic

I used one onion and two cloves of garlic, chopped up.

Stock

I used a vegetable stock pot added straight to the soup maker jug followed by hot water up to the line.

Seasonings

You can optionally add salt and pepper according to taste.

Soup Toppings

I stirred in some grated cheddar cheese and sprinkled some fresh rocket leaves on top of the soup when I served it.

Making It

Add all the onion and garlic to the soup maker jug, followed by the chopped up broccoli. I added half of the rocket to the jug and kept the other half to blend in at the end.

You may need to press down a little bit on the ingredients to fit it all in, or, chop the broccoli up into smaller chunks.

Add the vegetable stock pot direct to the soup maker and then add hot water up to the maximum line. Set the soup maker off on smooth.

When the soup maker cycle has finished, if you have reserved some of the rocket you can add it now and manually blend it.

Serve the soup and optionally stir in some grated cheese and sprinkle any fresh rocket on top.

How To Store This Soup

If you’re not planning to serve all of the soup immediately you can store it in the fridge for 3 days or in the freezer for up to 3 months.

Leave the soup to cool before placing it in the fridge or freezer.

I like to use these soup containers, especially for freezing. After pouring myself a generous portion of this soup I had enough to fill up 4 x 250ml compartments.

When you want to have a portion, simply defrost it in the fridge overnight and reheat in the microwave or in a pot on the stove.

Ingredients
  

  • 1 onion chopped
  • 2 cloves garlic crushed
  • 400 – 600 g broccoli chopped
  • 60 g rocket leaves
  • 1 vegetable stock pot/cube + hot water up to the line
  • salt and pepper according to taste

Instructions
 

  • I reserved half the rocket and then added all the remaining ingredients to the soup maker, including the vegetable stock pot/cube. Add hot water up to the MAX line.
  • Set the soup maker off on smooth.
  • At the end of the soup maker cycle serve add the remaining rocket and manually blend. Season according to taste.
  • Optionally stir in some cheese at the end, or, a little green pesto.
