Air Fryer Garlic, Lemon and Herb Chicken Thighs

Marinated in plenty of garlic, lemon juice and a selection of herbs and spices, this chicken thigh recipe is easy to make and tastes amazing when cooked in the air fryer.

The air fryer is perfect for cooking all types of chicken, from thighs, breasts, drumsticks, wings and even whole joints if your basket is large enough.

What You Need

The ingredients below are enough to cook 8 small chicken thighs or 4 to 6 larger ones. Feel free to adjust accordingly.

Chicken

I have used bone in chicken thighs with the skin on but you could adapt for drumsticks, thighs, wings or breasts.

Marinade

I used 6 cloves of garlic, 2 tbsp olive oil, the juice of 1 lemon, ½ tsp each of dried thyme, rosemary, parsley and smoked paprika, plus ¼ tsp each of black pepper and salt.

If you want a more garlicky flavour, add some more garlic cloves or extra garlic granules.

I used a Cosori Dual Blaze air fryer but they can be cooked in any air fryer.

Making It

Start by mixing together in a bowl the garlic, olive oil, lemon juice, herbs and seasoning. Ensure everything is well combined to create a flavour-packed marinade.

Add the chicken thighs to the bowl, making sure each thigh is thoroughly coated with the garlic and herb marinade. For best results, cover the bowl with cling film and refrigerate for at least 30 minutes, or up to 4 hours for a stronger flavour.

Place the marinated chicken thighs skin side down in the air fryer basket. Cook at 180°C for 12 minutes, then turn the thighs over and cook for an additional 10 minutes, or until the skin is crispy and the internal temperature reaches 75°C (use a meat thermometer to check).

Once cooked, let the chicken rest for 5 minutes to retain its juiciness. Serve with your favourite side dishes, such as roast potatoes or a fresh salad.

Tips:

  • If you love extra garlic, feel free to add a couple more cloves to the marinade.
  • For an even crisper skin, lightly spray the chicken with a bit of olive oil before cooking.
