Ingredients
1onionchopped
1clovegarliccrushed
500gcarrots* chopped
1medium potatoapprox. 150g, chopped
Optional spicestry cumin, chilli or mixed spices
300mlfresh orange juice
Vegetable stockto the MAX line for soup makers
Seasoning to taste
Instructions
In A Soup Maker
Optionally sauté the onion and garlic in your soup maker.
Add the remaining ingredients to the soup maker jug. (I added 1 tsp of mixed spices)
Add a stock pot/cube and top up to the MAX line with hot water.
Set off on smooth.
Season according to taste.
Optionally add in some crème fraiche.
In A Pan
Sauté the onion and garlic in a little butter or oil in a pan.
Add the remaining ingredients and about 1 litre of vegetable stock.
Bring to the boil before reducing to a simmer for about 25 to 30 minutes.
Blend with a hand blender, or in a food processor (taking care not to burn yourself).
Season according to taste.
Optionally add in some crème fraiche.
Notes
*Carrots - I used 500g of carrots for the Ninja Soup Maker, you can add a little more if you are making it in a pan. In a Ninja Soup Maker this is a medium consistency soup, reduce the amount of carrots or leave out the potato if you prefer a thinner consistency, or add more if you prefer a thicker soup.
To Make In A Morphy Richards Compact Soup Maker
You will need to reduce the quantities to 2/3rds - use the following as approximates, taking care not to overfill your soup maker!- 350g carrots, chopped- 1/2 onion + 1 clove garlic, crushed- 1 small potato, chopped- 150ml orange juice- Vegetable stock cube + hot water to MAX line- Spices - optionally add in your choice of spices; cumin, chilli, mixed spices etc
