Ingredients

soft brown sugar

Instructions
Preheat the oven to 180C/160C fan/gas 4.
Grease a 20cm x 30cm baking tin.
Put the butter and sugar in a mixing bowl and cream it together.
Slowly add in the beaten eggs and combine.
Fold in the flour, baking powder and cinnamon and gently mix together.
Add the grated carrot and sultanas, stirring them in.
Transfer the mixture to the greased baking tin and place in the preheated oven.
Cook for 25 to 30 minutes or until cooked through and golden brown on top.
Leave the carrot cake to cool down before adding frosting or icing of your choice.
