Ingredients
3boneless chicken thighs*chopped
1onionchopped
2clovesgarlicchopped
2carrotschopped
2celery stalkschopped
1tspground ginger
1tbspcurry powder
150gsplit red lentilsrinsed
1vegetable stock pot
Instructions
Prepare the ingredients by chopping the chicken and vegetables. Wash the split red lentils.
Add everything to the soup maker including the stock pot followed by water up to the MAX line of the soup maker. I use hot water but you can use cold water if you prefer.
Set the soup maker off on smooth or chunky - I prefer chunky for this particular soup, especially as the Ninja partially blends it so you get that in between consistency.
Serve the soup and season according to taste.
Notes
*you can substitute boneless chicken thighs with breasts. Remember if you have a Ninja soup maker you can add the chicken raw to the soup maker. For other soup makers use cooked/leftover chicken, or check with the manufacturer to see if you can add raw meat.
