If you’re looking for a filling soup that’s full of flavour, try this curried chicken and lentil soup!
I love adding lentils to soups, they are such a handy ingredient to have on standby in the cupboard. I tend to add split red lentils as all you need to wash them before adding them to the soup maker – no soaking required!
Read on to see how to make this soup in a few easy steps.

What You Need
Like most soups you can be flexible with the measurements and make some substitutions according to what you have available.

These are the ingredients that I used:

- Boneless chicken thighs – I used 3 raw boneless chicken thighs. You can use chicken breasts instead, I just prefer to use thighs. If you have a Ninja soup maker you can add raw chicken direct to the soup maker, but for other soup makers you more than likely can only use cooked chicken – it’s the perfect way to use up any leftovers from a Sunday roast!
- Onion & garlic – I used 1 onion and 2 cloves of garlic.
- Vegetables – You can add as many vegetables as you want – or leave them out completely. I added 2 chopped up celery stalks to add a little extra flavour (plus I needed to used them up!) but you could also add some chopped up carrots.
- Split red lentils – I used 150g of split red lentils, all you need to do is wash them before adding them to the soup maker.
- Curry powder & ground ginger – I used 1 tbsp of medium curry powder as well as 1 tsp of ground ginger. If you have fresh ginger you could add 1 tbsp of grated ginger instead.
- Stock – I used 1 vegetable stock pot, you could use a chicken stock pot instead.
For a creamier soup you could add in 200ml of coconut milk.
Making The Soup
As with many soup maker recipes it’s as simple as adding everything to the soup maker.

I typically add the stock pot directly to the soup maker jug rather than make it up seperately. I then add hot water up to the MAX line of the soup maker. You can also use cold water, or make the stock up seperately before adding it.

Set the soup maker off on your chosen cycle. I used the chunky soup function which with the Ninja soup maker does still blend it a little – and this for me makes it the perfect soup for me, not completely smooth with some texture to the consistency.

And that’s it! A simple and very tasty curried chicken and lentil soup all made in a soup maker.

Curried Chicken and Lentil Soup (in a Soup Maker)

Ingredients
- 3 boneless chicken thighs* chopped
- 1 onion chopped
- 2 cloves garlic chopped
- 2 carrots chopped
- 2 celery stalks chopped
- 1 tsp ground ginger
- 1 tbsp curry powder
- 150 g split red lentils rinsed
- 1 vegetable stock pot
Instructions
- Prepare the ingredients by chopping the chicken and vegetables. Wash the split red lentils.
- Add everything to the soup maker including the stock pot followed by water up to the MAX line of the soup maker. I use hot water but you can use cold water if you prefer.
- Set the soup maker off on smooth or chunky – I prefer chunky for this particular soup, especially as the Ninja partially blends it so you get that in between consistency.
- Serve the soup and season according to taste.
