I’ve been experimenting lately with air frying chicken breasts wrapped in foil packets. It’s the perfect way to ensure the chicken breast stays lovely and juicy as well as giving you the opportunity to test out plenty of different marinades and flavours.

What You Need
To print out the recipe or for more concise ingredients and instructions, head down to the recipe card at the bottom of this post.

- Chicken Breasts – as many as you need/can fit in the air fryer basket. You can use boneless chicken thighs if you prefer.
- Runny Honey – I used 1 tbsp of runny honey per chicken breast.
- Dijon Mustard – I used 1/2 tsp per chicken breast.
- Garlic Powder – I used 1/2 tsp of garlic powder per chicken breast.
- Olive Oil – I used 1/2 tsp of olive oil per chicken breast.
- Salt and pepper to season according to taste.
- Foil – enough to wrap each chicken breast individually and form ‘packets’ around them.
- Air Fryer – this recipe will work with any air fryer.
Preparing and Cooking It
The following quantities are based on air frying two chicken breasts, if you want to cook more or less just adjust the amounts accordingly. The first thing you need to do is mix the honey, mustard, olive oil and garlic powder in a bowl.

Next, lay out the foil pieces and lay a chicken breast on each one. Brush some marinade on each chicken breast, on both sides.

Then pour the remaining marinade over each chicken breast, making sure the liquid doesn’t run off the edge of the foil (you’ll need to fold the foil over into a packet quickly).

Fold the foil over lengthways to cover the chicken breast and then again at the ends, folding the ends over so that there are no gaps.

If the foil isn’t folded over tightly enough the juice from the chicken will come out during the air frying process – and we want all the lovely honey and mustard sauce to pour over the chicken at the end!

Transfer the chicken foil parcels to your air fryer basket. Switch the air fryer on to 180°C and cook for 20 minutes.

I didn’t turn the chicken over halfway through – mainly because I forgot to! – but the chicken was perfectly cooked through. If in doubt, use a thermometer to check the internal temperature. The chicken should be 75°C.

Very carefully remove the foil packets from the air fryer basket. You will need to use oven gloves or those little silicone gloves to pick them up. Take extra care as the liquid inside will be very hot, and remember, we want to keep it all inside the foil – you’ll also appreciate not getting it all over your air fryer basket too!
Transfer them to a bowl and unwrap the foil to remove it. There should be quite a lot of liquid that you can use to pour over the chicken and any side dishes you are serving with it.

You can serve the chicken breasts whole, or slice them up into strips.
There are plenty of other flavours you can experiment with when cooking chicken breasts in an air fryer – or you can keep it simple and air fry them with just a little seasoning.

I hope you enjoy this recipe, let me know in the comments if you end up making it!

Ingredients
- 2 chicken breasts
- 2 tbsp honey
- 1 tsp Dijon mustard*
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to season
Instructions
- In a bowl mix the 2 tbsp of honey, 1 tsp of mustard, 1 tbsp of oil and 1tsp of garlic powder.
- Place each chicken breast on a piece of foil.
- Brush some of the mixture over each side of the chicken breast.
- Pour the remaining mixture evenly over each chicken breast and quickly fold the foil over the chicken to prevent the liquid from rolling off the foil. First wrap the foil lengthways and then fold the ends over, making sure they are tightly closed to prevent any gaps.
- Transfer the chicken in the foil packets to the air fryer basket.
- Air fry at 180°C for 20 minutes.
- When the air fryer has finished cooking, carefully remove the foil packets from the basket to a bowl. The liquid inside will be very hot so take care when you unwrap the foil.
- Serve with your favourite sides, using the sauce to pour over the chicken breast.

Did you use 1 tablespoon or 1 teaspoon of the mustard as you state both measurements in the recipe?
