Ingredients
1large ripe avocado
½a red onionvery finely diced
6cherry tomatoesfinely chopped
½a red chillifinely chopped
Juice of 1-1 ½ limes
A small handful of corianderroughly chopped
Sea salt
Instructions
Halve the avocado, remove the stone and scoop out the flesh with a spoon.
Add to a bowl and mash with the back of a fork until crushed.
Stir through the remaining ingredients, adding the lime juice and sea salt to taste before serving.
