Halloumi tray bake is the perfect dish to whip up on a weeknight. It’s so simple, yet it tastes delicious!

Ingredients
750gnew potatoes
2tbspolive oil
250gmixed peppers
2red onions
4clovesgarlic
300gcherry tomatoes
250g- 300g broccoli/courgettes/asparagus
2tspdried mixed herbs/dried chilli flakes
225ghalloumi
Instructions
Preheat oven to 200C (fan) 180C/gas mark 6
Slice the potatoes in half and add to a baking tray. Drizzle in 1 tbsp of oil and season with a little salt and/or 1tsp of dried mixed herbs or chilli flakes. Cook in the oven for 15 minutes.
Slice the peppers, chop the onions into chunks, peel the garlic cloves and break up the broccoli/slice the courgettes.
After 15 minutes remove the baking tray from the oven and add the remaining vegetables. Drizzle with the other 1 tbsp of olive oil and the remaining 1 tsp of dried mixed herbs/chilli flakes. Return to the oven for a further 15 minutes.
Slice the halloumi.
After the 15 minutes remove the oven tray and lay the halloumi slices over the top of the vegetables. Return to the oven for a further 10 minutes (or you can put under a grill instead). The halloumi will begin to melt slightly and brown up.
