Ingredients
30gfresh basil leaves
45gpeanutsor pine nuts
60gfreshly grated Parmesan cheese
2 - 4clovesgarlicpeeled
120mlolive oil
¼tspsalt
Instructions
Optionally toast the nuts, or lightly fry them before making the pesto.
In a Food Processor/Blender
Add the peanuts (or pine nuts) and basil leaves to the food processor or blender and pulse several times.
Add the cheese and peeled garlic and pulse again. Use a spatula to scrape the sides down.
With the food processor (or blender) running on it's lowest setting, slowly pour a steady flow of oil into the mix, scraping the sides down with a spatula.
Once it has finished, taste the pesto and add any salt if needed.
With A Mortar And Pestle
Crush the peeled garlic cloves until it turns in to a paste.
Add the washed basil leaves in batches, pounding them until they are also like a paste. This will take at least 5 minutes.
Add the nuts, crushing them in until they are also like a paste and mixed in.
Slowly add the grated cheese, pounding it until it is completely mixed in.
Lastly, drizzle the oil in slowly, pounding as you go. Season to taste.
