Ingredients
1.2kgpotatoesMaris Piper or King Edward
2tbspoilvegetable, sunflower or groundnut
Salt and/or herbs and spices to season
Instructions
Preheat oven to 200C/180C fan/gas mark 6.
Wash potatoes and optionally peel the skin. Chop them up into finger width slices.
Bring them to the boil in a saucepan of cold salted water and then immediately switch off. Don't leave them to boil.
Pat them dry with a clean tea towel or kitchen paper.
Coat them in your chosen oil - it is easier to put them in a large bowl and use your hands to toss them about and make sure they are evenly coated.
Sprinkle the oiled chips with salt and/or herbs/spices (see notes).
Spread the chips out on a baking tray. Make sure there is enough space and they are not piled on top of each other. Use 2 baking trays if necessary.
Place the baking tray(s) in the preheated oven and cook for 30 to 45 minutes, depending how browned you like your chips. Check on them at least twice during the cooking time and give them a shake to make sure they cook evenly.
