Ingredients
4chicken breasts
4rashers smoked baconfat trimmed
100mlBBQ Sauceor you can make your own - see notes
200gcheeseMozzarella, Cheddar or Gouda are good choices
Instructions
Preheat oven to 200C (fan), 180C/Gas Mark 6.
Wrap each chicken breast in a bacon rasher (you can use 2 bacon rashers per chicken breast if you wish) and place in an oven proof dish.
Cook chicken and bacon for 25 minutes.
If you are making your own BBQ sauce start making it now (see notes below).
Once the 25 minutes are up, remove from the oven and cover the chicken and bacon with BBQ sauce. Sprinkle grated cheese across each chicken breast and return to the oven for a further 5 minutes until the sauce is heated through and the cheese is melted.
Serve with mashed potato or potato wedges.

Make Your Own BBQ Sauce:1 tin (or can) of passata (you can substitute with chopped tomatoes or tomato ketchup)1tbsp white wine vinegar1tbsp smoked paprika1tsp garlic granules2tbsp Worcestershire sauce1tbsp light brown sugarAdd all the ingredients to a saucepan and bring to the boil. Reduce to a simmer and cook gently for 20 minutes, stirring occasionally.
