Mexican Noodle Bean Soup In A Soup Maker
This Mexican-inspired soup is a hearty and spicy combination of beans, noodles, tomatoes and spices.

Ingredients
- 1 red onion chopped
- 3 cloves garlic crushed
- 1 red chilli thinly sliced
- 1 red pepper chopped
- 1 yellow pepper chopped
- 1 x 400g tin chopped tomatoes
- 1 x 400g tin pinto beans drained
- 1 tbsp tomato puree
- 1 tsp each cayenne pepper cumin, coriander, smoked paprika
- 50 g dried egg noodles*
- 1 vegetable stock pot or cube
- Salt and pepper according to taste
Instructions
- Optionally saute the onion and garlic if your soup maker has this function.
- Add all the remaining ingredients. Depending on your soup maker model, add the noodles at the beginning, 5 minutes before the end, or cook them separately and stir them in. With the Ninja soup maker, I add the noodles at the end of the cycle and use the manual cook function for a few minutes or until the noodles are cooked.
- I add the stock pot direct to the soup maker jug and then top it up with hot water to the line.
Notes
Noodles: you can use dried or fresh noodles. Cook according to packet instructions.
